The quality of the Cabernet was outstanding in 2016, with a great combination of fruit, concentration and depth. Cinsault was elegant and silky with an explosion of aromas. Grenache relished the weather, and compensated for its juiciness with high sugar content. This, along with a high degree of phenolic maturation resulted in a deep chocolatey taste. The wine fermented in concrete vats using only wild yeasts, and was aged 6 months in French oak before being bottled. The final wine is deep red with a brilliant transparency. It has aromas of blackcurrant with powerful notes of leather, cigar box, cherries, dark chocolate, and a hint of coriander. The palate is layered with smooth tannins, flavors of red prunes, dark pepper and a fresh acidity. A long aftertaste of dark chocolate dominates the finish.
